CHARACTERISTICS: non-pressed cheese made from pasteurized whole milk, semi-cooked soft paste , aged for about 40 days
ORGANOLEPTIC CHARACTERISTICS:
• CRUST: thin of pale yellow color.
• PASTE: very soft, melts in the mouth with a few holes.
• FLAVOR: sweet, creamed.
