Risotto "Cansei"
Ingredients (for 4 people):
400 gr. half-fine rice (Vialone nano or Carnaroli type) - spring wild herbs from Cansiglio region (nettle, taraxacum, bladder campion, Good King Henry herb, ...) -
100 gr. LATTERIA ALPAGO (fresh cheese), cubed
100 gr. CANSIGLIO STAGIONATO (matured cheese), cubed
Preparation:
Heat herbs in a saucepan, then pour in the rice. Add a good vegetable broth. Finally, stir in the Cansiglio cheese cubes.
