GNOCCHI (" Italian dumplings ")
WITH “BAR BIANCO CANSIGLIO” RICOTTA
Ingredients ( for 4 people):
500 gr . CANSIGLIO FRESH RICOTTA (cottage cheese ) - 1 egg - 100 gr . flour - 50 gr . grated STAGIONATO DEL CANSIGLIO ( matured cheese ) - SMOKED CANSIGLIO RICOTTA to grate
Preparation:
Mix all ingredients together and cut off small pieces of dough and roll to one and one half cm lengths. Drop them into boiling salted water and cook until they rise to the surface. Serve with butter, sage leaves and grated Cansiglio ricotta.
